Sweet Birthday Girl

Our sweet little grand-daughter had her party for her second birthday yesterday.

We gave her a remote control My Little Pony airplane...

She has 3 older sisters and an older brother as well as a tiny baby sister...

Her 3 1/2 year sister really likes it and suddenly is WAY more interested in playing with her now.

How Great Thou Art

How Great Thou Art

words by C. G. Boberg & Stuart K. Hine

Swedish Folk Melody
Verse 1:
O Lord my God! When I in awesome wonder
Consider all the worlds Thy hands have made,
I see the stars, I hear the rolling thunder,
Thy power throughout the universe displayed.
Refrain:
Then sings my soul, my Savior God, to Thee,
How great Thou art, how great Thou art!
Then sings my soul, my Savior God, to Thee,
How great thou art, how great Thou art!
Verse 2:
When through the woods and forest glades I wander;
And hear the birds sing sweetly in the trees;
When I look down from lofty mountain grandeur
And hear the brook and feel the gentle breeze;
Refrain
Verse 3:
And when I think that God, His Son not sparing,
Sent Him to die, I scarce can take it in;
That on the cross, my burden gladly bearing,
He bled and died to take away my sin;
Refrain
Verse 4:
When Christ shall come with shout of acclamation
And take me home, what joy shall fill my heart!
Then I shall bow in humble adoration,
And there proclaim, my God, how great Thou art!
Refrain

Ethiopian Cabbage Dish

I recently found this cabbage recipe.  I love cabbage and wanted to fix something similar to Corned Beef and Cabbage in honor of St. Patrick's day, so I fixed this dish last night.  My husband was very gracious and ate the potatoes (he will eat just about anything I fix because it is cheaper than going out to eat).

Here is a picture.  I thought it was delicious!
Healthy, too.

Out of the Mouths of Babes...

I have eight grandchildren ranging in age from 1 month to 10 years and I love each one of them dearly.  They all brighten my life.  Here are a few cute things they have said recently...

  • I recently was babysitting my 2 grandchildren in Kentucky.  My 3-1/2 year-old grand-daughter was frustrated with her 18-month-old little brother and called him "stupid".  I was quite shocked that this sweet little girl would say such a thing.  Then she suddenly started repeating, "stupid", "dang it", "shut-up".  I realized she was "showing off" in front of me by saying all the bad words she knew. So I went into the kitchen to hide my stifled laughter... (ah, to be that innocent)
  • About a year ago my grand-daughter was in the car with her mother. She asked why the new MacDonald's doesn't have a farm like the Old MacDonald's.... (you know the song...Old MacDonald had a farm...E-I-E-I-O...
  • My 5-year-old grand-daughter recently rebuked her mother by saying, "Mommy, you just called Grandma "Mom".  (OK, who does she think I am, some little old lady off the street who just comes to visit them each week?)  Love it!!!
  • I recently went to the Grand Opening of the new grocery store in our town with my daughter and her 6 children.  I was commenting to my 10-year-old grand-daughter that I thought there were really a lot of old people there.  She turned and looked at me and said, "Grandma, you're old!" (Oops!)

In Defense of the Brussel Sprout...

I think Brussel Sprouts (or are they Brussels Sprouts - since they were popularized in Brussels) are under-rated.  OK, so I've hardly ever eaten brussel sprouts.  I can only remember having them once when I was a kid, and of course, other than by their appearance, I was completely unimpressed.  I was, however, fascinated that they were complete miniatures of their larger cousin, the cabbage. They still fascinate me.  So, last week, after reading my daughter's blog about her miniature artichoke find, I started craving brussel sprouts.  I bought some.  Having never purchased purchased them before in my nearly 38 years of marriage, I found myself at a loss as how to prepare them.  I decided to wash them and cut them in half and stir-fry them.  This was a mid-afternoon snack attack (did I ever mention that I am usually a salty/savory snacker - when my kids were little we'd sometimes go to a nearby Ice Cream Parlor/Greasy Spoon Eatery.  My husband and kids would order ice cream cones and I would order a hamburger and curly fries - for a snack).

I ate the Brussel sprouts for my snack and thought - hmmm, they're all right. The next evening, I cooked them in the microwave and ate them as a side with my baked chicken.  (By the way, my husband won't touch them with a 10-foot pole).  I was not thoroughly impressed with the flavor, but there was some satisfaction that I just consumed a serving of cruciferous/beta carotene-containing semi-goodness.

Today, I cut the little gems in quarters and stir-fried them along with onion and garlic and added cooked pasta and topped them with freshly grated parmigiano-reggiano and freshly ground pepper.  To die for!!!  Of course, this is my favorite lunch - any vegetable stir-fried, topped with the aforementioned goodies and pasta.  Here's a pic...

Jo-Mama's

I can hardly eat pizza from Pizza Hut or Domino's or other popular pizza chains.  I will, on occasion, eat a pizza from Little Caesar's - because who can resist a $5 pizza.  But, my absolute favorite pizza place is Jo-Mama's, a quaint little pizza place in Woodland Park - just a hop, skip and a jump from "the ranch".  We've been going there for years; however, it used to be a "Pizza Factory" and a few years ago it was sold and became "Jo-Mama's".

Here is a mural they painted a few years ago.

I was hoping they had a picture of one of their pizzas on their website, but they don't.  But trust me, their pizza is divine.  My favorite is called the "Panther".  Here is the menu.

Last September, we ate dinner there at about 4:00 pm on a Friday.  The entire restaurant was full.  There was hardly a vacant table in the whole place, but we found a booth away from the crowd.  It turns out that the entire football team from Buena Vista stops there on the way to their football games.  We overheard the coach when he was paying - the bill came to nearly $500.  Apparently, pizza places are few and far between in South Park.
